green veggies + tofu stir-fry

As delicious as it is nutritious.

The other day, I had all the ingredients to make this veggie chili, but when the beans were finished soaking/cooking, we ate them right then (with garlic and pepper, of course). So the next day I used the vegetables – green peppers, jalapeno peppers, tomatillos, celery, and green onions – and some tofu in a quick, easy, and delicious stir-fry. (See my mushroom and red bell pepper stir-fry post for details and seasonings.)
