A few months ago, I was introduced to this tasty trifecta by a friend, who is also an excellent vegetarian cook.  The second time, I got to help with the preparation and saw just how easy this summery side is: it really is just cubed watermelon, chopped fresh mint, and grilled halloumi (a Greek cheese that is made for grilling).  Unfortunately, I can’t find halloumi in Hattiesburg, so I made to sure to stock up on it at Whole Foods during our trip to New Orleans earlier this week.  The salad was just the thing for a rainy 4th of July afternoon.

A quick internet search for watermelon, mint, and halloumi reveals myriad variations with more ingredients, but I say less is more.  Just chop, grill, toss, and enjoy.

  1. Anything that incorporates watermelon is a go for me! A friend of mine that has the greenest of fingers, lives deep in the woods. They always have a great harvest of watermelons. Last party I went to she had made watermelon sorbets, watermelon tinis, watermelon salsa with mint and a bit of jalapano.

    I’m going to NO next week and my friend lives very close to Whole Foods – I’ll be buying halloumi cheese. Want me to bring you guys back anything?
